[RECIPE] Pink Watermelon Bubbly

Vegetables Accidentally Recipe: Pink Watermelon BubblyA quick and quenching way to beat the summer heat. Make them kid-friendly or adults-only: either way, the cup count will go up while this bubbly treat goes down. 

And, with about 1 cup of fruit per serving, you can feel a little smug while serving refills all afternoon. They won't suspect a thing!


6 cups chopped watermelon
¼ cup lime juice
2–4 tablespoons sugar (as needed)
zest of 1 lime
6 ounces vodka (optional)
ice cubes
4 cups sparkling water
6 (3-inch) watermelon wedges, for garnish
(equals about 1½ cups)
1 lime, cut into 6 wedges

  1. Place watermelon, lime juice and 2 tablespoons of the sugar into a blender. Blend until liquefied. Add additional sugar, to taste. Add lime zest and vodka (if using) and pulse once more to combine. 

  2. Place ice in each glass and fill halfway with sparkling water. Top off with the watermelon mixture. Garnish with watermelon and lime wedges, while gloating a little inside.
