Ingredients:

2 pounds pizza dough
cornmeal
4 cups shredded or crumbled cheese—choose 1 or any combination: 

  mozzarella
provolone
Monterey/pepper jack
Parmesan
goat cheese
feta
4 cups chopped vegetables and fruits—choose any combination: 

 
artichoke hearts
banana peppers 
basil (fresh)*
bell pepper
broccoli
mushrooms
olives
onion
pineapple
roasted red pepper
spinach*
sun-dried tomato* 
tomato

2 cups (10 ounces) cooked chopped meats (optional)—choose any combination: 

 
bacon
ground beef 
ham 
meatballs 
pepperoni
sausage 
pinch of flavorings (optional)—choose 1 or any combination: 

  chopped garlic crushed red pepper flakes dried Italian herbs
olive oil
4 cups Simple Tomato Sauce, warmed

Directions:

  1. Preheat oven to 425ºF. Allow dough to warm to room temperature for about 30 minutes. Sprinkle a large baking sheet with a thin layer of cornmeal.
  2. Divide dough into 8 equal pieces. On a floured surface, roll each piece to form a 7-inch circle.
  3. To make individual calzones to order...  
      For each calzone, in a small bowl, toss together the selected ½ cup cheese, ½ cup vegetables and fruits, and ¼ cup meats for 1 calzone.
     ...Or, if for some reason your family can all agree on the same filling...
      Simply mix all the selected cheese, meats, and vegetables and fruit in a large bowl, and divide mixture evenly among the dough circles
  4. Pile filling mixture in the center of the dough, keeping edges clear. Fold dough over filling, pressing edges with a fork to seal in the secrets. 
  5. Transfer calzones to prepared baking sheets. Brush tops lightly with oil. Bake until golden brown, about 20 minutes. 
  6. Serve calzones with Simple Tomato Sauce. There will be a rush for these as they come out of the oven! Stand well back.
* Don’t forget: MyPlate says leafy greens only count as half their volume, and dried fruits and vegetables count as double, in your total daily cups.
